King Arthur Tender White Cake 9.21.12

A simple white cake, well balanced.  One might say a kind of boring, dry cake.

2 3/4 c Cake Flour
1 2/3 c sugar; superfine is best
1 T baking pwdr
3/4 t salt
3/4 c butter
4 large egg whites plus 1 whole large egg
1 c full-fat vanilla yogurt or
  1 c whole milk
2 t vanilla
1 t almond extract



I decided to fill and decorate these.  Filled with strawberry puree.  Frosted with strawberry buttercream and topped with a glazed strawberry.
