Vegan Chocolate Chip Cookies 3.28.14
Vegan Chocolate Chip Cookies
3.5 oz coconut oil
6.5 oz brown sugar
¼ c almond milk
1T vanilla
10.25 oz KA AP flour
1 t baking soda
1 t baking pwdr
½ t (fine) salt
1 c vegan choc chips
1. Pre-heat oven to 350 degrees
2. Cream together the coconut oil & brown sugar, then add the almond milk & vanilla.
3. In a separate bowl mix the flour, baking soda, baking powder and salt.
4. Combine the wet & dry ingredients, then fold in the chocolate morsels & any other mix-ins of your choosing.
5. Roll into Tbsp sized balls & place them on an ungreased cookie sheet, then flatten them out a bit with your palm. The dough may be a little crumbly, but just smoosh it together and it will work fine!
6. Bake for 7-10 minutes. (I did 9 which was perfect)

Solamae turned 4 years old, and at her party was the cutest cake of Clifford the big red dog! A shell border with alternating scrolls. Chocolate frosting over a yellow cake. Yellow sanding sugar and heart confetti. All from a local bakery, but I didn't find out which one!
There was some white buttercream frosting on the bottom of the cake, but we couldn't figure out why.

I’ve found a new bakery specializing in French macaroons! I met the owner, who works at EH Chocolatier and she generously let me try a Kalamansi Macaroon.
The website lists all the flavors she makes, which are exciting. I hope I get to try them soonThese were very tart! But I tried some a few weeks later, and they were much less tart, so perhaps one batch varies from another. The mini cheesecakes are from Quebrada bakery and are so delicious!
